WThis is an easy interpretation of a beverage found on a new cocktail list. Designed as a batch prepared mix which is loaded full of tastes associated with holiday season, which makes it ideal for hosting a celebration. Reserve the remaining citrus syrup you can use for breakfast cocktails, sweets, or to mix another batch of the drink.

Serves 10 guests
For the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Cocktail (produces 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Method
To prepare the Cordial: Place every items in a pot, bring to a simmer, mixing so the sugar melts. After that, take off the heat and let it to cool completely. Pour to a sealable bottle, seal and store chilled, it will last for up to one month.
To make Cocktail Base: Mix every liquid ingredients into a large bottle, leave to sit for an hour, then strain preferably using cheesecloth, so it's fully clarified.
For serving: Add 85ml of your cocktail base to a cocktail shaker containing ice, gently stirring carefully for one minute until cold. Strain into a cold coupe glass or similar, garnish with some cranberries and finish by giving it a quick spritz with the mandarin essence over the top.
